Bimber – Single Cask Oloroso Finish Bottled for Selfridges
The journey begins at Bimber’s single farm, where 100% of their barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in our wooden washbacks that were hand-made at own cooperage. Bimber use direct fire to heat the small copper pot stills, and mature the spirit in hand-selected casks. Finally the whisky is expertly blended and bottled onsite at the distillery.
This exquisite single cask release of 936 bottles was drawn from a 2010 vintage Oloroso sherry butt. Following an initial maturation in ex-bourbon casks the distinctive character of this whisky has been enhanced by a finishing period in an cask from renowned Spanish sherry producer González Byass.
